It is a rainy San Pedro Sunday morning – perfect baking weather so I decided to make granola. Oats are very cheap here – I paid $6.75 for a 2lb container at Twin Supermarket on St Thomas St. near Municipal Airport. Coconut was $6.89 and raisins $4.09 – both purchased at Save U. When I looked it up the recipes I found said to use slow cook oats and not the quick kind. Unfortunately, I had already bought the fast cooking ones on my Belize City shopping trip so I decided to wing it.
I also added in maple syrup – coconut oil – shredded coconut and raisins. If it works out well I will get fancier and add some nuts and dried fruit next time around.
So far so good homemade granola passed the tacoboy taste test. I Will see if Cindy and Maureen give it a pass as well – gave them both some to try.
A bit of sad news this morning on San Pedro Sun today there was a big fire at Neri’s tacos late last night. The smoke was visible from our veranda which is 1.5 miles south of there. Neri’s was a favorite place for delicious cheap Belize food to many and will be missed. Condolences to all those who were affected by the fire.
Quick oats did work ok Debra. Surprisingly how easy it was to make. Upon further research I found out why the recommend the longer cooking oats is because they are not cut as small. Cindy just came upstairs and said it passed her taste test too.
Those look yummy Laurie..I guess the quick oats worked out ok…Aunt Jemima works for me…
Thanks for the offer Al will consider that – only trouble is you might get us hooked on something we cannot have regularly lol. Aunt Jemima is from land of junk foodies.
Tilsonberg syrup is not top of the line due to a warmer climate than the best which is from a farm town near Quebec City called St. Jean-de-Tilly. And for decent granola you need light amber grade. I can send you a bottle if you pm your address and a nominal fee for s&h. Using Aunt Jemima on or for anything is criminal.:)
Because of the wind and rain the house was cooler which cancels out your numbers and makes it decent baking weather. I was not up for spending a small fortune on real maple syrup Al though I agree it would taste much better. You can by real stuff from Tilsonberg Ontario here at Green house.
How is 88F with 80% humidity good baking weather? Also if the maple syrup is not from Vermont or Quebec it will be sub standard granola. From the photo it looks like Aunt Jemima. I don’t think that’s real maple syrup. I don’t mean to rain on your parade:)
