I was enjoying a couple of days up north at Grand Caribe this past weekend and got a pleasant surprise while walking the beach with Cowboy Doug on Friday afternoon – Coconut Leo. If you know me well you know my all time favorite drink besides iced coffee is fresh coconut water – if I could have it on tap I would. As soon as we spotted him in the tree I asked Cowboy if he had any spare gallon containers so we could support the local Belize economy.
Coconut Leo charges $10 a gallon, if you see him on the beach I highly recommend picking up a gallon or two, one for now and freeze one for later. Jose jr one of the resort staff was helping Coconut Leo as he cleaned the coconut trees and making sure that no one was injured by falling coconuts. Guests at Grand Caribe Resort got a big kick out of watching Leo do his coconut tree climbing acrobatics and enjoyed tasting pure coconut water right out of the coconut.

Coconut tip – Freeze fresh coconut water in ice cube trays to add to your tropical drinks, as the ice melts it gives a delicious flavor to your drink instead of watering it down.
Coconut water recipe – Add coconut water to your rum punch for a nice flavor. For parties I make it in a 1 gallon water container and usually throw in some pineapple juice, coconut rum, Caribbean rum and fruit squash as well. Cowboy and I added it to our white rum and cranberry for a nice change.
I never ate the feathers silly and have no issues with feather pillows. My allergist was a very smart guy, he said stop all the foods I tested allergic to for 2 weeks or so then introduce them one by one, see what happens and decide how much or how little you want to eat them. That was the end of eating chicken making me sick. I stopped eating it for a long while and it was actually coming to Belize the cave tubing zoo tour lunch that broke my fast.
The Mennonites raise flawless chickens. And Carribean chicken is the best anywhere. Its likely the feathers you are allergic to.Which makes me wonder now if there was a free range chicken close at hand when you had he vanilla episode.And I recommended you raise your own cow like the Belizeans do. If you know what goes in one end then product quality at the other is assured. If you are phlegmy try a glass of warm dou jiang (soy milk). (and cognac)
Coconut water is way better not so phlegm producing as milk, and yes I use it in my cereal too. Besides humans are the only animals that continue drinking milk after after childhood. I do not buy the if other animals had access to Oreos they would drink milk too theory – every see how they raise cows these days and the bad things the feed them? My allergist said it is no wonder food is making people sick with how they are raising the animals these days when I discovered I was allergic to chicken.
A glass of milk ( comes from a cow) has more nutrients, lytes as well as fluid. And more vitamins too. Furthermore it mixes well with Martell Cognac. Makes more sense to me to buy a cow. Put some brome hay and sweet feed in one end and milk comes out the other. And u don’t break your spine climbing up trees. Just sayin’

Glad to see everything seems OK, after the threat of Ernesto. Very interesting pix. of Leo. When I was in the Far East, we used to take off just enough of the top of a coconut, to gain access to the inside. We then stuffed raisins inside and crushed them as best we could. The top was then carefully put back on and wired shut. The nut was then left in the sun, to ferment the interior raisins and nut water. It was then drunk at a later date. Usually when you had a four day weekend!!!! It was known locally as, (Cava, or Kava,) but we called it, Jungle Juice.
